What is virginity?
Traditionally, virginity was defined as the intact state of the hymen. Virginity is lost when the hymen is broken. This occurs to a woman the first time she has sex. When looking for a wife, a virgin woman was more valuable than a non virgin woman.
Some might argue that the hymen isn’t real, some might argue that this practice was sexist or archaic. However, regardless of your values in the current year, it’s a historical fact that virginity was indeed valued in many places, throughout history.
In more recent times, the concept of virginity has been extended to men. To define virginity as the first time having sex. According to this definition, a person can have multiple virginities, one for each type of organ with which sex is had.
What is the purpose of sex?
Sex is a biological process that facilitates reproduction. You may choose to go on temporary or permanent birth control. You may choose to masturbate. You may choose to have gay sex. That doesn’t change the fact that the biological purpose of sex is to facilitate reproduction.
Therefore, sexual dynamics can be understood through the understanding of human reproduction. If you want to know why men are attracted to and repulsed by certain things, while women are attracted to and repulsed by other things. If you want to know why the male sex drive and sexual desire behaves in one way and behaves differently for women. If you want to understand almost anything else about human sexuality – you must view it in the context of human reproduction.
Men want women and women need men. Men are the ones who build and maintain society, even in the current year. Men can survive just fine without women, but men want women. Women OTOH, absolutely need men for their basic survival. This too is still true in the current year.
Men and women are so different in so many ways, we can hardly relate to each other at all. Think back to when you were 10 years old. Girls had cooties, didn’t they. Girls were weird and you wanted nothing to do with them. Now think back to when you were 13. Your hormones are going crazy and all you could think about is getting naked with the girls. What changed was sex. At 10, sex had no value to you and therefore, you had no reason to associate with girls. At 13, sex became valuable to you and therefore, all you could think about was girls!
Because sex (and the resulting children) is the primary factor that binds men and women to each other and because men want women but women need men. Therefore, men want sex, but women need sex.
What is the purpose of marriage?
Because men want women and women need men. Because their association with each other is primarily through sex. Because the sex gap is a thing. Is why the business deal called marriage was invented.
The deal is such. The man provides the woman with a lifetime of protection and provision. In exchange for her lifetime commitment of sexual access and exclusivity, child rearing and housework. This deal has been drastically altered in recent decades, but in the natural order, this is the deal. That’s why the deal was more or less the same across cultures and throughout history.
The importance of virginity
Because of our different roles in reproduction, women are human beings and men are human doings. As a result of this, men desire women for who they are, while women desire men for what they could do.
What makes a woman attractive to a man is her being. What makes a man attractive to a woman is his doing. Just think of what men find attractive in women – a youthful body, pretty face, boobs and butt, a pleasant demeanor etc. All these are ways of saying: a healthy, non damaged being. Conversely, what do women find attractive in men – chiselled jaw, strong biceps, a six pack, money, ambition, accomplishment etc. All these are ways of saying: a man capable of protecting me and providing for me.
We can now understand why having many sexual partners is attractive in a man and repulsive in a woman. Because a human doing who managed to conquer the sex gap many times over, is instinctively seen as an accomplished stud. But a human being who spread her legs, allowing many men into her, is instinctively seen as just another used up slut.
You may say: “I don’t care if a woman had previous partners, as long as [insert specific qualifications here]”. To that I respond: it doesn’t matter what your specific preferences and tolerance level is. What matters is the fundamental dynamics at play. Let’s take the extreme example for emphasis. Would you marry a slut who participated in a race to fuck 1,000 men in one night? Why or why not? Conversely, whenever a new emperor conquered a town, what did the women do? (Despite the fact that the emperor already fucked hundreds of women…)
Conclusion
Virginity is valued because women are human beings and men are human doings, which in turn is because women need men and men want women. Therefore, a man who has sex with many women is a stud, but a woman who has sex with many men is a slut. Also therefore, a man who’s unable to obtain sex will be shamed for being a virgin.
You may find this offensive. Your personal preferences may be to marry a tatted up prostitute single mom of 10 who had sex with 10,000+ men and is $834,000 in debt. It doesn’t matter. Your personal preference and tolerance levels don’t change human nature. Your offended feelings don’t make it any less true.

Before the rise of DNA testing, it was the best way to assure paternity, and that you weren't being cuckolded into raising some other dude's kids.

Sure, that's part of the equation, but it can't be the sole reason.
Different people will give different reasons and I think this is one of those cases where the answer is yes, they're all partially correct.
Bottom line is that when it comes to marriage, virgins are the most valuable and her value keeps falling with each additional partner. This has been true across cultures and throughout history.
